BBQ Lamb Doner Kebab
Ingredients:
1.5 lbs (700g) lamb shoulder or leg, trimmed and cut into chunks
1/4 cup (60ml) olive oil
1/4 cup (60ml) BBQ sauce
3 tablespoons soy sauce
3 tablespoons red wine vinegar
2 cloves garlic, minced
1 tablespoon smoked paprika
1 tablespoon ground cumin
1 teaspoon ground coriander
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1/2 teaspoon salt
Fresh parsley, chopped (for garnish)
Warm pita bread (for serving)
Your favorite salad ingredients (e.g., lettuce, tomatoes, cucumbers)
Directions:
In a large bowl, combine the olive oil, BBQ sauce, soy sauce, red wine vinegar, garlic, smoked paprika, cumin, coriander, oregano, black pepper, and salt.
Add the lamb chunks to the bowl and toss to coat evenly. Cover and marinate in the refrigerator for at least 2 hours, or overnight for best results.
Preheat your grill or grill pan over medium-high heat. Thread the marinated lamb onto skewers.
Grill the lamb skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired level of doneness and slightly charred on the outside.
Remove the lamb from the skewers and let rest for a few minutes. Slice into thin strips.
Serve the lamb strips in warm pita bread with your favorite salad ingredients and a sprinkle of chopped parsley.
