Lemon Herb Butter Steak with Fluffy Mashed Potatoes

Ingredients:
Steak:
2 ribeye steaks, 1-inch thick
Salt and black pepper, to taste
2 tablespoons olive oil
Lemon Herb Butter:
4 tablespoons unsalted butter, softened
1 tablespoon fresh parsley, chopped
1 teaspoon fresh thyme, chopped
Zest of 1 lemon
2 cloves garlic, minced
Salt and pepper, to taste
Fluffy Mashed Potatoes:
4 large potatoes, peeled and cubed
4 tablespoons butter
1/2 cup milk
Salt and pepper, to taste
Instructions:
Prepare the Lemon Herb Butter:
In a small bowl, mix together the softened butter, parsley, thyme, lemon zest, garlic, salt, and pepper until well combined. Set aside.
Cook the Steaks:
Season the steaks generously with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Add the steaks and cook for 4-5 minutes on each side for medium-rare, or until desired doneness.
Just before removing from the skillet, add half of the lemon herb butter to the pan, allow it to melt, and spoon over the steaks to baste. Remove the steaks and let them rest.
Make the Mashed Potatoes:
Boil the potatoes in salted water until tender, about 15-20 minutes.
Drain and return the potatoes to the pot. Add butter and mash until smooth and fluffy.
Gradually add milk, continuing to mash until creamy. Season with salt and pepper to taste.
