Grilled Lobster Tails with Lemon Herb Butter

Ingredients:
4 lobster tails (about 8 oz each)
1/2 cup (1 stick) unsalted butter, melted
2 tbsp fresh lemon juice
1 tbsp lemon zest
2 tbsp fresh parsley, finely chopped
1 tbsp fresh chives, finely chopped
2 cloves garlic, minced
Salt and pepper, to taste
Lemon wedges, for serving

Directions:
Prepare the Lobster Tails: Preheat your grill to medium-high heat. Using kitchen shears, cut down the top of the lobster shell lengthwise, starting from the exposed meat and working towards the tail. Gently pull apart the shell and lift the meat out, placing it on top of the shell.
Make the Lemon Herb Butter: In a small bowl, mix the melted butter, lemon juice, lemon zest, parsley, chives, minced garlic, salt, and pepper.
Grill the Lobster Tails: Brush the lobster meat generously with the lemon herb butter. Place the lobster tails on the grill, shell side down. Grill for 8-10 minutes, basting occasionally with more butter, until the meat is opaque and cooked through.
Serve: Remove the lobster tails from the grill and serve immediately with extra lemon herb butter and lemon wedges on the side.
