Spicy Tomato Spaghetti
Ingredients:
400g spaghetti
2 tablespoons olive oil
1 onion, finely chopped
3 garlic cloves, minced
1 red chili, finely chopped
400g can chopped tomatoes
2 tablespoons tomato paste
1 teaspoon sugar
1/2 teaspoon dried oregano
Salt and black pepper to taste
Fresh basil leaves, for garnish
Grated Parmesan cheese, for serving (optional)
Directions:
Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
In a large pan, heat the olive oil over medium heat. Add the onion and cook until softened.
Add the garlic and chili, and cook for another 2 minutes.
Stir in the chopped tomatoes, tomato paste, sugar, and dried oregano. Season with salt and black pepper.
Simmer the sauce for 10-15 minutes, or until it thickens slightly.
Toss the cooked spaghetti with the sauce until well coated.
Serve with fresh basil leaves and grated Parmesan cheese, if desired.
