Crispy Cod Kiev Butter
Ingredients:
4 cod fillets (about 150g each)
100g unsalted butter, softened
2 garlic cloves, minced
2 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped
Zest of 1 lemon
50g plain flour
2 eggs, beaten
100g panko breadcrumbs
2 tbsp olive oil
Salt and pepper to taste
Lemon wedges, for serving
Directions:
Prepare Herb Butter: In a bowl, mix the softened butter with minced garlic, parsley, dill, and lemon zest. Season with salt and pepper, then shape into a log using cling film. Refrigerate until firm.
Prepare Cod Fillets: Preheat the oven to 200°C (180°C fan/gas mark 6). Slice a pocket into each cod fillet and fill with a slice of the herb butter. Press the fillet edges together to seal.
Coat the Fillets: Dredge each fillet in flour, dip in the beaten eggs, and coat with panko breadcrumbs. Press gently to ensure the breadcrumbs adhere.
Cook the Fillets: Heat the olive oil in a large ovenproof frying pan over medium heat. Fry the cod fillets for 2-3 minutes on each side until golden brown. Transfer the pan to the oven and bake for 8-10 minutes until the fish is cooked through.
Serve: Serve the crispy cod Kiev with lemon wedges and your choice of side.
