Ingredients:
• 1 ½ cups all-purpose flour
• 1 cup granulated sugar
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 1 tbsp cocoa powder
• ½ cup unsalted butter, softened
• 2 large eggs
• 1 cup buttermilk
• 1 tsp vanilla extract
• 1 tbsp white vinegar
• Blue food coloring
For the Cream Cheese Frosting:
• 8 oz cream cheese, softened
• ½ cup unsalted butter, softened
• 4 cups powdered sugar
• 1 tsp vanilla extract
Directions:
1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
3. In a large bowl, beat the butter until creamy. Add eggs one at a time, beating well after each addition.
4. Mix in the buttermilk, vanilla extract, and vinegar until well combined.
5. Gradually add the dry ingredients to the wet mixture, beating on low speed until smooth.
6. Add blue food coloring until the desired shade is reached.
7. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
9. To make the frosting, beat the cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until creamy.
