Chicken & Mushroom Alfredo
This Chicken & Mushroom Alfredo is a rich and creamy dish that combines tender chicken, sautéed mushrooms, and fettuccine pasta all smothered in a luscious Alfredo sauce. It’s the perfect comfort food for weeknight dinners or when you want to treat yourself to a delicious homemade meal!
Ingredients:
• 2 boneless, skinless chicken breasts, cut into strips
• 8 oz fettuccine pasta
• 2 tbsp olive oil
• 2 tbsp unsalted butter
• 8 oz mushrooms, sliced
• 3 cloves garlic, minced
• 1 cup heavy cream
• 1/2 cup grated Parmesan cheese
• 1/4 cup chicken broth (optional for thinning the sauce)
• Salt and pepper to taste
• Fresh parsley for garnish
Directions:
1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the fettuccine according to the package instructions until al dente. Drain and set aside.
2. Cook the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken strips with salt and pepper. Cook the chicken until browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.
3. Sauté the Mushrooms: In the same skillet, add the remaining olive oil and butter. Add the sliced mushrooms and sauté until softened and browned, about 5 minutes. Stir in the minced garlic and cook for 1 more minute.
4. Make the Alfredo Sauce: Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, letting it melt into the sauce. Add chicken broth if the sauce is too thick. Season with salt and pepper to taste.
5. Combine Everything: Return the cooked chicken to the skillet and toss it in the Alfredo sauce along with the sautéed mushrooms. Stir in the cooked fettuccine and toss to coat everything in the creamy sauce.
