Cajun Shrimp Rice Skillet
Ingredients:
• 1 lb shrimp, peeled and deveined
• 1 cup long-grain rice
• 2 cups chicken broth
• 1 tablespoon olive oil
• 1 onion, chopped
• 1 bell pepper, chopped
• 2 cloves garlic, minced
• 1 can (14.5 oz) diced tomatoes
• 2 teaspoons Cajun seasoning
• 1 teaspoon paprika
• 1/2 teaspoon thyme
• 1/4 teaspoon cayenne pepper (optional)
• Salt and pepper to taste
• 2 green onions, sliced
• 1/4 cup fresh parsley, chopped
Directions:
1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.
2. Add the garlic and cook for another minute until fragrant.
3. Stir in the rice, Cajun seasoning, paprika, thyme, cayenne pepper (if using), and cook for 2 minutes, allowing the rice to toast slightly.
4. Pour in the chicken broth and diced tomatoes (with their juice), stirring to combine. Bring to a boil.
5. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and has absorbed most of the liquid.
6. Add the shrimp on top of the rice mixture, cover, and cook for another 5-7 minutes, or until the shrimp are pink and cooked through.
7. Season with salt and pepper to taste. Sprinkle with sliced green onions and fresh parsley before serving.
