Ingredients:
For the Ribs:
2 racks beef ribs (about 3-4 lbs each)
Salt and pepper, to taste
2 tbsp garlic powder
2 tbsp smoked paprika
1 tbsp onion powder
1/2 cup brown sugar
2 cups BBQ sauce
For the Salad:
Mixed greens (lettuce, arugula, parsley)
1 cucumber, sliced
2 tomatoes, sliced
1 green bell pepper, sliced
1/2 red onion, thinly sliced
Olive oil
Vinegar
Salt and pepper, to taste
Directions:
Prepare the Ribs:
Preheat your oven to 300°F (150°C).
Remove the membrane from the back of the ribs and trim any excess fat.
Mix salt, pepper, garlic powder, smoked paprika, onion powder, and brown sugar together. Rub this mixture all over the ribs.
Place the ribs bone-side down on a baking sheet, cover tightly with foil, and bake for about 2.5-3 hours or until the meat is tender and pulls away from the bone.
Finish on the Grill:
Preheat your grill to medium heat.
Brush the ribs with BBQ sauce and grill for 5-10 minutes on each side, until the sauce is caramelized and the ribs get a nice char.
Prepare the Salad:
In a large bowl, combine the mixed greens, cucumber, tomatoes, green bell pepper, and red onion.
Drizzle with olive oil and vinegar. Season with salt and pepper. Toss everything
together.
Serve:
Slice the ribs between the bones and arrange them on a platter.
