Ingredients:
1 rack of pork ribs (about 3-4 lbs)
Salt and pepper, to taste
2 cups of your favorite BBQ sauce
1 tablespoon smoked paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1/2 tablespoon chili powder (optional for a kick)
For the Coleslaw:
1/2 head of green cabbage, thinly sliced
1/4 head of purple cabbage, thinly sliced
2 carrots, shredded
1/2 cup mayonnaise
2 tablespoons vinegar
1 tablespoon sugar
Salt and pepper, to taste
Directions:
Prep the Ribs:
Remove the membrane from the back of the ribs. Season both sides with salt, pepper, paprika, garlic powder, onion powder, and chili powder.
Preheat your grill, smoker, or oven to 275°F (135°C).
Cook the Ribs:
Place the ribs on the grill or in the oven. Cook for about 2-3 hours, or until tender.
In the last 30 minutes of cooking, baste the ribs generously with BBQ sauce, continuing to cook until the sauce is caramelized and sticky.
Make the Coleslaw:
Combine all coleslaw ingredients in a large bowl and mix until well coated. Refrigerate until ready to serve.
Serve:
Let the ribs rest for about 10 minutes after cooking, then cut between the bones.
Serve with a side of the fresh, tangy coleslaw.
