Asian-Inspired Gourmet Burgers
Ingredients:
For the Sauce:
1 cup Kewpie mayonnaise
1/2 cup ketchup
1 tablespoon bottled yuzu juice
For the Chili:
1 (28-ounce) can whole peeled tomatoes
1 tablespoon olive oil
1 pound ground beef
1 cup finely diced yellow onion
2 teaspoons kosher salt
1/4 cup tonkatsu sauce
2 teaspoons gochugaru (Korean chili powder)
2 teaspoons turbinado sugar
1 1/2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
1/2 cup sake
1/4 cup cold water
2 tablespoons all-purpose flour
1 teaspoon smoked paprika
For the Burgers:
3 pounds ground beef
2 teaspoons kosher salt
1 teaspoon black pepper
8 sesame seed hamburger buns, buttered and toasted
8 fresh tomato slices
2 cups shredded iceberg lettuce
Directions:
Prepare the Sauce:
Mix Kewpie mayonnaise, ketchup, and yuzu juice in a bowl. Refrigerate until serving.
Make the Chili:
Blend canned tomatoes until smooth and set aside.
Heat olive oil in a saucepan over medium-high heat. Cook 1 pound of ground beef with onion and salt until meat is browned and onions are softened.
Add processed tomatoes, tonkatsu sauce, gochugaru, sugar, coriander, and cumin. Pour in sake and bring to a simmer.
Whisk water and flour together; stir into the saucepan. Add smoked paprika and simmer for 10 minutes, stirring often.
Grill the Burgers:
Combine remaining ground beef with salt and black pepper. Form into 8 patties.
Grill over medium heat for about 5 minutes per side or until desired doneness is achieved.
Assemble the Burgers:
Place a patty on each bun. Top with chili, a slice of tomato, lettuce, and a spoonful of the prepared sauce.
