Salmon Pasta
Ingredients:
8 oz (225 g) pasta (such as penne or fettuccine)
2 tablespoons olive oil
2 cloves garlic, minced
1 cup cherry tomatoes, halved
1 cup spinach leaves
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 salmon fillets
1 tablespoon lemon juice
Salt and black pepper, to taste
Fresh basil, for garnish
Directions:
Cook the pasta according to package instructions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant.
Add cherry tomatoes and cook until they start to soften.
Stir in spinach leaves and cook until wilted.
Add heavy cream and Parmesan cheese, stirring until the cheese is melted and the sauce is smooth.
Season with salt and black pepper.
Meanwhile, season salmon fillets with salt, black pepper, and lemon juice. Cook in a separate skillet over medium heat until the salmon is cooked through and flakes easily.
Flake the salmon into bite-sized pieces and add to the pasta sauce.
Toss the cooked pasta with the sauce and salmon until well combined.
Garnish with fresh basil before serving.
