Mint Cheesecake Layer:
• 16 oz cream cheese, softened
• 3/4 cup granulated sugar
• 3 large eggs
• 1 tsp vanilla extract
• 1/2 tsp peppermint extract
• 1/4 cup sour cream
• Green food coloring (optional)

Chocolate Ganache:
• 1 1/2 cups semisweet chocolate chips
• 3/4 cup heavy cream

Garnish (optional):
• Crushed mint chocolates (like Andes mints)
• Fresh mint leaves

Directions:

1. Make the Mint Cheesecake Layer: Preheat the oven to 325°F (163°C). Grease and line a 9-inch springform pan with parchment paper. In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing on low speed until combined. Stir in the vanilla extract, peppermint extract, and sour cream until smooth. Add green food coloring if desired. Pour the cheesecake batter into the prepared pan and bake for 45-50 minutes until set. Let cool, then refrigerate for at least 4 hours or overnight.


2. Make the Chocolate Cake: Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add eggs, milk, vegetable oil, and vanilla extract, and mix on medium speed for 2 minutes.
