Garlic Butter Steak and Potatoes
Juicy Steak and Crispy Potatoes Cooked Together in a Rich Garlic Butter Sauce, Perfect for a Hearty and Delicious Meal
Ingredients:
1.5 lbs (680g) baby potatoes, halved
3 tablespoons olive oil, divided
Salt and pepper to taste
2 ribeye or sirloin steaks (about 8 oz each)
3 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 tablespoon fresh parsley, chopped (for garnish)
Directions:
Cook the Potatoes:
Preheat your oven to 425°F (220°C). On a large baking sheet, toss the halved potatoes with 2 tablespoons of olive oil, salt, and pepper. Arrange them in a single layer and roast for 20-25 minutes, or until golden brown and crispy.
Prepare the Steak:
While the potatoes are roasting, season the steaks generously with salt and pepper. In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the steaks and cook for 3-4 minutes per side for medium-rare, or until your desired level of doneness. Remove the steaks from the skillet and let them rest.
Make the Garlic Butter:
In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic, rosemary, and thyme. Sauté for about 1 minute, until fragrant. Return the steaks to the skillet, spooning the garlic butter over the top to coat.
Combine and Serve:
Add the roasted potatoes to the skillet, tossing them gently in the garlic butter. Let everything heat through for a minute. Garnish with fresh parsley and serve immediately, slicing the steak if desired.
