Ingredients:
For the Cake:
4 large eggs
¾ cup granulated sugar
1 tsp vanilla extract
¼ cup buttermilk
¼ cup vegetable oil
1 tbsp cocoa powder
1 tbsp blue food coloring
¾ cup all-purpose flour
½ tsp baking powder
¼ tsp salt
Powdered sugar (for dusting)
For the Cream Cheese Filling:
8 oz (226g) cream cheese, softened
½ cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
Instructions:
Preheat Oven: Set your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper, ensuring there is an overhang for easy removal.
Prepare Cake Batter: In a large bowl, beat eggs and sugar until thick and pale. Stir in vanilla extract, buttermilk, vegetable oil, cocoa powder, and blue food coloring until well combined.
Mix Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture, mixing until just combined.
Bake the Cake: Pour the batter into the prepared pan, spreading it evenly. Bake for 12-15 minutes, or until the cake springs back when lightly touched.
Cool the Cake: While the cake bakes, sprinkle a clean kitchen towel with powdered sugar. Once the cake is done, invert it onto the prepared towel and carefully peel off the parchment paper.
Roll the Cake: Starting at one short end, roll the cake with the towel. Allow it to cool completely on a wire rack.
Prepare the Filling: Beat cream cheese and butter until smooth. Add powdered sugar and vanilla extract, continuing to beat until creamy.
Assemble the Roll: Carefully unroll the cooled cake and spread the cream cheese filling evenly over the surface.
Roll Again: Roll the cake back up without the towel. Wrap it in plastic wrap and refrigerate for at least 1 hour before serving.
