Pineapple Chicken and Rice
This vibrant dish brings together sweet pineapple and tender chicken for a delicious and satisfying meal. Perfect for any weeknight dinner!
Ingredients:
1 pound chicken breast, cubed
1 cup jasmine rice
1 cup pineapple, cubed
1 tablespoon soy sauce
1 tablespoon olive oil
2 cups chicken broth
1 red bell pepper, diced
1 onion, chopped
2 cloves garlic, minced
1 teaspoon ginger, grated
Salt and pepper to taste
1/4 cup green onions, sliced
1 tablespoon sesame seeds
Instructions:
1. Heat olive oil in a large skillet over medium heat. Cook chicken until golden, then set aside.
2. In the same skillet, sautà onion, garlic, and red bell pepper until softened.
3. Mix in pineapple, jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil.
4. Reduce heat, cover, and simmer for 18-20 minutes until rice is cooked.
5. Stir in the cooked chicken, heat through, and serve garnished with green onions and sesame seeds.
