The Real Sausage Rougail
Ingredients:
1 tablespoon vegetable oil
1 pound smoked sausages (e.g., Andouille or chorizo), sliced
1 large onion, chopped
3 cloves garlic, minced
1 (14-ounce) can diced tomatoes
2 teaspoons grated fresh ginger
1 teaspoon turmeric powder
1 teaspoon paprika
1-2 fresh chilies (adjust for heat), chopped
Salt and pepper to taste
2 tablespoons fresh thyme leaves
2 tablespoons chopped fresh cilantro (optional)
Directions:
In a large skillet over medium heat, heat the vegetable oil. Add the sliced sausages and cook until browned, about 5-6 minutes.
Remove the sausages from the skillet and set them aside. In the same skillet, add the chopped onion and cook for 3-4 minutes, or until translucent.
Stir in the minced garlic, grated ginger, turmeric powder, and paprika. Cook for an additional minute until fragrant.
Add the diced tomatoes, chopped chilies, salt, and pepper. Stir well to combine.
Return the browned sausages to the skillet and add the fresh thyme. Reduce the heat and let simmer for 15-20 minutes, allowing the flavors to meld together.
Before serving, garnish with fresh chopped cilantro if desired.
