Delicious Pepper Steak in a Crock Pot
Ingredients
For the Pepper Steak:
2 lbs beef sirloin or flank steak, sliced into thin strips
2 tbsp vegetable oil
1 medium onion, sliced
3 bell peppers (red, yellow, green), sliced
2 cloves garlic, minced
1/4 cup soy sauce
2 tbsp Worcestershire sauce
1/4 cup beef broth
1 tbsp brown sugar
1 tsp ground black pepper
1/2 tsp salt
1/2 tsp paprika
1/4 tsp red pepper flakes (optional)
2 tbsp cornstarch mixed with 3 tbsp water (for thickening)
For Garnish:
Cooked white or brown rice
Chopped green onions (optional)
Sesame seeds (optional)
Instructions
For the Crock Pot Pepper Steak:
Prepare the Beef:
In a skillet over medium-high heat, heat the vegetable oil. Add the sliced beef strips and sear for 2-3 minutes per side, until browned. Transfer the beef to your crock pot.
Add Vegetables and Sauce:
To the crock pot, add the sliced onion, bell peppers, and minced garlic.
In a small bowl, whisk together the soy sauce, Worcestershire sauce, beef broth, brown sugar, black pepper, salt, paprika, and red pepper flakes (if using). Pour the sauce over the beef and vegetables in the crock pot.
Cook:
Cover the crock pot and cook on Low for 6-7 hours or on High for 3-4 hours, until the beef is tender.
Thicken the Sauce:
About 30 minutes before serving, add the cornstarch-water mixture to the crock pot and stir well. Continue cooking until the sauce has thickened.
Serve:
Serve the pepper steak over cooked white or brown rice. Garnish with chopped green onions and sesame seeds if desired.
