Crisp Apple Pecan Salad with Tangy Apple Cider Vinaigrette
Ingredients:
For the Salad:
6 cups mixed salad greens (such as romaine, spinach, and arugula)
2 medium apples, thinly sliced (use Honeycrisp or Gala)
1/2 cup pecan halves, toasted
1/4 cup dried cranberries
1/4 cup crumbled feta cheese
1/4 red onion, thinly sliced
For the Tangy Apple Cider Vinaigrette:
1/4 cup apple cider vinegar
2 tbsp honey
1 tsp Dijon mustard
1/4 cup extra-virgin olive oil
Salt and black pepper, to taste
