Apple Pie Biscuits

Ingredients:
• For the Biscuits:
2 cups all-purpose flour
1 tbsp granulated sugar
1 tbsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, cold and cubed
3/4 cup cold whole milk or buttermilk
For the Apple Filling:
2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and chopped
2 tbsp unsalted butter
1/4 cup light brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg (optional)
1 tsp cornstarch mixed with 1 tbsp water (slurry)
For the Glaze:
1 cup powdered sugar
2-3 tbsp milk or heavy cream
1/2 tsp vanilla extract
Directions:
1. Prepare the Apple Filling:
In a medium saucepan, melt 2 tablespoons of butter over medium heat.
Add the chopped apples, light brown sugar, ground cinnamon, and ground nutmeg (if using). Cook, stirring occasionally, until the apples are soft and caramelized, about 5-7 minutes.
Stir in the cornstarch slurry and cook for another 1-2 minutes, or until the mixture thickens. Remove from heat and let the apple filling cool to room temperature.
2. Make the Biscuit Dough:
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
Cut in the cold cubed butter using a pastry cutter or fork until the mixture resembles coarse crumbs.o Gradually add the cold milk or buttermilk, stirring just until the dough comes together (be careful not to overmix).
3. Assemble the Apple Pie Biscuits:
Turn the dough out onto a lightly floured surface and gently knead it 3-4 times until it forms a cohesive ball.
Roll the dough out into a rectangle about 1/2 inch thick.
Spread the cooled apple filling evenly over half of the dough.
Fold the other half of the dough over the apple filling and gently press the edges to seal.
4. Cut and Bake the Biscuits:
Use a biscuit cutter or sharp knife to cut the dough into squares or circles. Transfer the biscuits to the prepared baking sheet.
Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown and the biscuits are cooked through.
5. Make the Glaze:
In a small bowl, whisk together the powdered sugar, milk or heavy cream, and vanilla extract until smooth. Add more milk as needed to reach your desired consistency.
6. Glaze and Serve:
