Christmas Baklava

Christmas Baklava
Flaky Christmas Baklava with Walnuts and Honey-Lemon Syrup
Ingredients:
For the Syrup:
1 cup granulated sugar
1/2 cup honey
3/4 cup water
2 tablespoons fresh lemon juice
For the Baklava:
4 cups walnuts, finely chopped
1 teaspoon ground cinnamon
1 package filo dough, trimmed to fit a 15×10-inch pan
1 cup (2 sticks) unsalted butter, melted
Directions:
Make the Syrup:
Combine sugar, honey, water, and lemon juice in a saucepan. Bring to a boil, reduce heat, and simmer for 4 minutes. Set aside to cool completely.

Prepare the Walnut Filling:
Pulse walnuts in a food processor until finely chopped. Mix with cinnamon and set aside.
Prepare the Filo Dough:
Butter a 15×10-inch pan. Trim filo dough to fit the pan, and keep unused sheets covered with a damp towel to prevent drying.
Layer the Filo and Filling:
Place a single sheet of filo in the pan, brush with melted butter, and repeat for 10 layers. Sprinkle a layer of the walnut-cinnamon mixture. Repeat the layering process with 5 more filo sheets, buttering each. Alternate layers until the walnuts are used up, then finish with 10 more layers of buttered filo.
Cut and Bake:
Preheat the oven to 325°F (165°C). Cut the baklava into diagonal or diamond shapes. Bake for 1 hour and 15 minutes, or until golden brown.
Add Syrup and Rest:
Immediately pour the cooled syrup over the hot baklava. Let it rest for 4-6 hours (or overnight) to allow the syrup to soak in completely.
