Roast Turkey and Cranberry Stuffed Sweet Potatoes
Ingredients:
4 medium sweet potatoes
2 cups cooked turkey, shredded (leftover turkey works great)
1 cup cranberry sauce
1/2 cup shredded mozzarella cheese (or your choice of cheese)
1/4 cup green onions, chopped
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ground cinnamon (optional)
Olive oil for drizzling
Directions:
Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). Prick each sweet potato several times with a fork and place them on a baking sheet. Drizzle lightly with olive oil and sprinkle with salt. Bake for 45-60 minutes, or until tender.
Mix the Filling: In a medium bowl, combine the shredded turkey, cranberry sauce, shredded cheese, chopped green onions, garlic powder, salt, black pepper, and ground cinnamon (if using). Mix until well combined.
Stuff the Sweet Potatoes: Once the sweet potatoes are done baking, remove them from the oven and let them cool slightly. Carefully slice them open lengthwise and fluff the insides with a fork. Spoon the turkey and cranberry mixture generously into each sweet potato.
Bake Again: Return the stuffed sweet potatoes to the oven and bake for an additional 15-20 minutes, or until the filling is heated through and the cheese is melted.
Serve: Remove from the oven and let cool for a few minutes. Serve warm and enjoy the delightful combination of flavors!
