Chocolate Banana Bread
Ingredients:
1 ¼ cups all-purpose flour
½ cup Dutch process cocoa powder
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
3 large brown bananas (about 1 ½ cups)
4 tablespoons butter, melted and slightly cooled
⅓ cup vegetable oil
¾ cup light brown sugar, packed
2 large eggs, at room temperature
1 teaspoon vanilla extract
1 ¼ cups semi-sweet chocolate chips
Directions:
Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with shortening or butter.
In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
In a large bowl, mash bananas with a fork or potato masher. Add melted butter, vegetable oil, brown sugar, eggs, and vanilla extract, mixing well.
Stir in dry ingredients to wet ingredients just until combined. Fold in 1 cup of chocolate chips.
Pour batter into prepared loaf pan. Sprinkle remaining chocolate chips on top.
Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean or with few moist crumbs.
Cool on a wire rack for 10-15 minutes before removing from pan.
