Irresistible Mini Chocolate Peanut Butter Pies 
Ingredients:
For the Crust:
1 1/2 cups chocolate cookie crumbs (about 20-24 cookies) 
4 tablespoons unsalted butter, melted 
For the Peanut Butter Filling:
1 cup creamy peanut butter 
8 oz cream cheese, softened 
1/2 cup powdered sugar 
1 teaspoon vanilla extract 
1 cup whipped cream or whipped topping 
For the Chocolate Ganache Topping:
1/2 cup semisweet chocolate chips 
1/4 cup heavy cream 🥛
For Garnish (Optional):

Crushed peanuts 
Mini chocolate chips 
Whipped cream 
Instructions:
1️⃣ Prepare the Crust: In a medium bowl, combine the chocolate cookie crumbs and melted butter. Stir until the crumbs are evenly coated. 
2️⃣ Form the Crusts: Press the crumb mixture firmly into the bottoms of a muffin tin lined with paper liners or a silicone muffin pan. Make sure to press the crumbs up the sides slightly to form a crust. Set aside. 
3️⃣ Make the Peanut Butter Filling: In a large bowl, beat together the creamy peanut butter, softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. 
4️⃣ Fold in Whipped Cream: Gently fold the whipped cream or whipped topping into the peanut butter mixture until fully incorporated and light. 
5️⃣ Fill the Crusts: Spoon the peanut butter filling evenly into the prepared crusts, smoothing the tops. Refrigerate for at least 2 hours to allow the filling to set. 
6️⃣ Prepare the Chocolate Ganache: In a small saucepan or microwave-safe bowl, heat the heavy cream until just about to boil. Remove from heat and add the chocolate chips. Let sit for a minute, then stir until smooth and glossy. 
7️⃣ Top the Pies: Once the pies are set, spoon or drizzle the chocolate ganache over the top of each mini pie. Garnish with crushed peanuts, mini chocolate chips, or a dollop of whipped cream if desired. 
8️⃣ Chill and Serve: Refrigerate the pies for another 15-30 minutes to set the ganache before serving. Enjoy these rich and creamy mini delights!
