ย Ingredients:
โข 1 1/2 cups all-purpose flour
โข 1 cup granulated sugar
โข 1/2 cup unsalted butter, softened
โข 2 large eggs
โข 1/2 cup buttermilk
โข 1 tbsp cocoa powder
โข 1 tsp vanilla extract
โข 1/2 tsp baking soda
โข 1/2 tsp salt
โข 1 tsp white vinegar
โข Purple food coloring
For the Frosting:
โข 1/2 cup unsalted butter, softened
โข 4 cups powdered sugar
โข 1/4 cup heavy cream
โข 1 tsp vanilla extract
โข Purple sprinkles (optional)
ย Directions:
1. Preheat your oven to 350ยฐF (175ยฐC) and line a cupcake pan with paper liners.
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Add the eggs one at a time, beating well after each addition.
4. Mix in the vanilla extract and cocoa powder.
5. In a separate bowl, combine the flour, baking soda, and salt.
6. Add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the flour mixture.
7. Stir in the white vinegar and purple food coloring until you reach your desired shade of purple.
8. Fill the cupcake liners 2/3 full with the batter.
9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
10. For the frosting, beat the butter until creamy. Gradually add the powdered sugar, alternating with the heavy cream, until you reach your desired consistency.
11. Mix in the vanilla extract.
12. Frost the cooled cupcakes and decorate with purple sprinkles if desired.
