Grilled Chicken Pineapple Sliders
Ingredients:
• 2 boneless, skinless chicken breasts
• 1 cup pineapple slices
• 4 slider buns
• 1/4 cup teriyaki sauce
• 1/4 cup mayonnaise
• 1 tablespoon sriracha sauce
• 1 small red onion, thinly sliced
• 1 cup lettuce leaves
• Salt and pepper to taste
• Olive oil for grilling
Directions:
1. Preheat your grill to medium-high heat.
2. Season the chicken breasts with salt and pepper, and brush with olive oil.
3. Grill the chicken breasts for 6-7 minutes on each side, or until fully cooked. During the last 2 minutes of grilling, brush the chicken with teriyaki sauce.
4. While the chicken is grilling, grill the pineapple slices for 2-3 minutes on each side, until they are caramelized.
5. In a small bowl, mix the mayonnaise and sriracha sauce to create a spicy mayo.
6. Slice the grilled chicken breasts into smaller pieces to fit the slider buns.
7. Assemble the sliders by spreading spicy mayo on the bottom buns, adding lettuce, a slice of grilled chicken, a grilled pineapple slice, and red onion. Top with the other half of the bun.
8. Serve immediately and enjoy!
