Ultimate Southern Fried Chicken Platter
Ingredients:
For the Chicken:
8 pieces of chicken (drumsticks, thighs, breasts)
2 cups buttermilk
2 cups all-purpose flour
1 tablespoon paprika
1 tablespoon garlic powder
Salt and pepper to taste
Oil for frying
For the Coleslaw:
1/2 head of green cabbage, shredded
1 carrot, shredded
1/2 cup mayonnaise
2 tablespoons vinegar
1 tablespoon sugar
Salt and pepper to taste
For the Corn on the Cob:
4 ears of corn
Butter
Salt
Buttermilk Biscuits:
See your favorite biscuit recipe or pre-made biscuit dough
Instructions:
Marinate the Chicken: Soak the chicken pieces in buttermilk for at least 2 hours (overnight for best flavor!).
Prep the Coating: Mix flour, paprika, garlic powder, salt, and pepper in a large bowl.
Fry the Chicken: Heat oil in a deep fryer or large pot to 350°F (175°C). Take each piece of chicken out of the buttermilk, dredge in flour mixture, and fry until golden brown and cooked through, about 15-20 minutes. Let drain on a wire rack.
Make Coleslaw: Combine cabbage, carrot, mayonnaise, vinegar, sugar, salt, and pepper in a bowl. Mix well and chill until ready to serve.
Cook the Corn: Boil or grill corn until tender, about 7-10 minutes. Serve with butter and a sprinkle of salt.
Bake Biscuits: Bake biscuits according to your recipe or package instructions until golden.
