📋 Ingredients:

For the Crust:
• 1 1/2 cups chocolate cookie crumbs
• 1/4 cup unsalted butter, melted

For the Cheesecake Filling:
• 3 (8 oz) packages cream cheese, softened
• 1 cup granulated sugar
• 1/4 cup unsweetened cocoa powder
• 1/2 cup sour cream
• 3 large eggs
• 1 teaspoon vanilla extract

For the Cherry Layer:
• 1 1/2 cups cherry pie filling

For the Ganache:
• 1/2 cup heavy cream
• 1 cup semi-sweet chocolate chips

1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and wrap the outside with foil to prevent leaking.
2. In a mixing bowl, combine chocolate cookie crumbs and melted butter. Press the mixture evenly into the bottom of the prepared pan to form the crust. Bake for 10 minutes, then set aside to cool.
3. In a large mixing bowl, beat the cream cheese until smooth. Add sugar and cocoa powder, and beat until well combined.
4. Mix in the sour cream and vanilla extract, then add the eggs one at a time, mixing on low speed until just incorporated.
5. Pour the cheesecake batter over the crust. Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
6. Turn off the oven, crack the door open slightly, and let the cheesecake cool in the oven for 1 hour. Afterward, transfer it to the fridge to chill for at least 4 hours, or overnight.
7. Once chilled, spread the cherry pie filling evenly on top of the cheesecake.
8. For the ganache, heat the heavy cream in a small saucepan until steaming (do not boil). Pour it over the chocolate chips and let sit for 5 minutes, then whisk until smooth.
