Glazed Lamb Chops with Mashed Potatoes
Ingredients:
For the Glazed Lamb Chops:
8 lamb chops
1/4 cup honey
2 tbsp balsamic vinegar
2 tbsp Dijon mustard
2 cloves garlic, minced
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp fresh rosemary, chopped
For the Mashed Potatoes:
2 lbs potatoes, peeled and cut into chunks
1/2 cup heavy cream
1/4 cup unsalted butter
Salt and pepper to taste
Fresh chives (for garnish, optional)
Instructions:
For the Glazed Lamb Chops:
Prepare the Glaze:
In a small bowl, whisk together the honey, balsamic vinegar, Dijon mustard, minced garlic, olive oil, salt, black pepper, and chopped rosemary.
Marinate and Cook:
Place the lamb chops in a dish or large zip-lock bag. Pour half of the glaze over the lamb chops, making sure they are well coated. Let marinate for at least 30 minutes.
Heat a large skillet over medium-high heat. Add the lamb chops and sear for 3-4 minutes on each side, or until they reach your desired level of doneness. Brush with the remaining glaze during the last minute of cooking.
Remove the lamb chops from the skillet and let them rest for 5 minutes before serving.
For the Mashed Potatoes:
Cook the Potatoes:
In a large pot, bring salted water to a boil. Add the potato chunks and cook for 15-20 minutes, or until tender when pierced with a fork. Drain well.
Mash the Potatoes:
In the same pot, add the drained potatoes, heavy cream, and butter. Mash until smooth and creamy. Season with salt and pepper to taste.
Serve:
Serve the glazed lamb chops over a bed of creamy mashed potatoes. Garnish with fresh chives for a burst of color, if desired.
