Parmesan Crusted Chicken
Ingredients
For the Chicken:
4 boneless, skinless chicken breasts
1/2 cup all-purpose flour
1/2 tsp salt
1/2 tsp black pepper
2 large eggs
1 tbsp water
1 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
1 tsp dried Italian seasoning
1/2 tsp garlic powder
2 tbsp olive oil (for frying)
Instructions
For the Parmesan Crusted Chicken:
Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness, about 1/2-inch thick.
In a shallow dish, combine the flour, salt, and black pepper. In a separate shallow dish, whisk together the eggs and water. In a third dish, mix together the grated Parmesan, panko breadcrumbs, Italian seasoning, and garlic powder.
Dredge each chicken breast in the flour mixture, shaking off any excess. Then dip it into the egg mixture, followed by the Parmesan breadcrumb mixture, pressing the coating onto the chicken to adhere.
Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
Remove the chicken from the skillet and place on a plate lined with paper towels to drain any excess oil.
Serve:
Serve the Parmesan Crusted Chicken warm, garnished with fresh parsley and a lemon wedge for an extra burst of flavor. Pair with a simple side salad or roasted vegetables for a complete meal.
