Red Snapper with Creamy Creole Sauce
Ingredients:
2 red snapper fillets
1 tablespoon olive oil
Salt and pepper to taste
1/2 cup diced tomatoes
1/2 cup diced bell peppers (red or green)
1/4 cup diced onions
2 cloves garlic, minced
1 cup heavy cream
1 tablespoon Creole seasoning
1/2 cup chicken broth
1 tablespoon chopped parsley (for garnish)
Instructions:
Prepare the Fish
Season both sides of the red snapper fillets with a sprinkle of salt and pepper. Heat a skillet over medium-high heat, and add the olive oil. Sear the fish fillets for 3-4 minutes per side, ensuring they are golden brown and cooked through. Remove and set them aside.
Make the Sauce:
Using the same skillet, add a touch more olive oil if needed. Sauté the onions, bell peppers, and garlic until softened and fragrant. Add the diced tomatoes and cook for an additional 2 minutes. Pour in the chicken broth, heavy cream, and Creole seasoning. Stir everything together and let it simmer for 5-7 minutes until the sauce thickens.
Combine and Serve:
Return the red snapper fillets to the skillet, spooning the rich Creole sauce over them. Let the fish warm through for 1-2 minutes. Garnish with chopped parsley and serve immediately.
