Beef & Parmesan Tortellini in Creamy Sauce
Ingredients:
8 oz beef chuck, cubed
12 oz cheese tortellini, cooked as per package instructions
2 tablespoons olive oil
1/2 cup diced onion
2 garlic cloves, minced
1 teaspoon dried basil
Salt and freshly ground black pepper, to taste
1 cup heavy cream
1/4 cup grated Parmesan cheese
Fresh parsley, chopped, for garnish
Instructions:
Brown the Beef:
Heat olive oil in a large skillet over medium-high heat. Add cubed beef, seasoning with salt and pepper. Cook for about 5-7 minutes, turning occasionally until all sides are browned. Remove the beef from the skillet and set it aside.
Sauté the Aromatics:
In the same skillet, add diced onion and minced garlic. Cook for about 3 minutes until the onions become translucent and fragrant.
Simmer in Cream:
Return the beef to the skillet. Add heavy cream and bring the mixture to a gentle simmer. Stir in the dried basil and half of the grated Parmesan. Let it simmer for 4-5 minutes, allowing the sauce to thicken slightly.
Combine with Tortellini:
Toss the cooked cheese tortellini into the skillet, mixing well to coat the pasta with the creamy sauce. Season with additional salt and pepper, adjusting to taste.
Serve Garnished:
Serve hot, topped with the remaining Parmesan cheese and a sprinkle of freshly chopped parsley.
