Cheesy Ground Beef and Rice Casserole
A Hearty and Comforting Family Favorite
Ingredients:
1 lb ground beef
1 onion, diced
2 cloves garlic, minced
1 cup long-grain white rice (uncooked)
2 cups beef broth
1 can (14.5 oz) diced tomatoes, drained
1 tsp Italian seasoning
Salt and pepper, to taste
2 cups shredded cheddar cheese
½ cup sour cream
Directions:
Preheat the Oven:
Set the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Cook the Beef Mixture:
In a large skillet, cook the ground beef, diced onion, and minced garlic over medium heat until the beef is browned. Drain any excess fat.
Add Rice and Seasonings:
Stir in the uncooked rice, beef broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring the mixture to a boil, then lower the heat, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
Mix in Sour Cream and Cheese:
Remove the skillet from heat. Stir in the sour cream and half of the shredded cheddar cheese until well combined.
Bake:
Transfer the mixture to the greased baking dish and sprinkle the remaining cheese over the top. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
