Cheesy Potato Burritos
Ingredients:
– 4 large potatoes, peeled and diced
– 1 cup shredded cheddar cheese
– 1/2 cup sour cream
– 1/4 cup chopped green onions
– 1 can (15 oz) black beans, rinsed and drained
– 1 tablespoon olive oil
– 1 teaspoon ground cumin
– 1 teaspoon chili powder
– Salt and pepper to taste
– 8 large flour tortillas
– 1 cup salsa
– Fresh cilantro, chopped (for garnish)
Directions:
1. Preheat oven to 375°F (190°C).
2. Boil the diced potatoes in a large pot of salted water for 10-15 minutes, or until tender. Drain and set aside.
3. In a large mixing bowl, combine the cooked potatoes, cheddar cheese, sour cream, green onions, black beans, olive oil, cumin, chili powder, salt, and pepper. Mix well.
4. Warm the flour tortillas in a microwave or on a skillet until pliable.
5. Spoon the potato mixture onto the center of each tortilla, then roll up the tortillas burrito-style.
6. Place the burritos in a baking dish and top with salsa.
7. Bake for 20-25 minutes, or until the burritos are heated through and the tops are slightly crispy.
8. Garnish with fresh cilantro before serving.
