Chicken Tortellini Soup
Cozy Chicken Tortellini Comfort Soup Recipe
Ingredients:
For the Soup:
1 ¼ lb bone-in chicken breast
Salt/Pepper, to taste
2 teaspoons Italian seasoning
2 tablespoons olive oil
2 tablespoons butter
1 yellow onion, diced
¾ cup diced carrots
2 ribs celery, diced
3 cloves garlic, minced
6 cups chicken broth
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
10 oz refrigerated cheese-filled tortellini
Optional Add-Ons:
2-3 cups fresh spinach or 1 cup heavy cream
Rind from Parmesan or Romano cheese
Frozen peas, corn, or green beans
Directions:
Sear the Chicken:
Season chicken with salt, pepper, and Italian seasoning. Heat olive oil in a soup pot over medium-high heat. Sear chicken for 3-4 minutes per side until browned. Set aside and let rest for 10 minutes, then shred.
Make the Soup:
In the same pot, melt butter and scrape the browned bits from the bottom. Add diced onions, carrots, and celery. Sauté for 5 minutes, then add minced garlic, Worcestershire sauce, hot sauce, and seasonings. Cook for another minute.
Add Broth and Chicken:
Pour in the chicken broth, add shredded chicken, and simmer for 15 minutes. Keep it at a gentle simmer to avoid toughening the chicken.
Cook the Tortellini:
Add the refrigerated tortellini and cook for about 3 minutes, or until tender. Taste and adjust seasoning as needed. For extra richness, stir in heavy cream or add spinach and allow it to wilt.
Serving:
Serve hot, garnished with grated Parmesan and crackers if desired. Enjoy!
