Churro Chocolate-Stuffed Cookies – a heavenly treat!
Ingredients:
Unsalted butter
Granulated sugar
Brown sugar
Eggs
Vanilla extract
All-purpose flour
Baking soda
Salt
Ground cinnamon
Milk chocolate squares
Granulated sugar (for rolling)
Instructions:
Preheat the oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream the butter and sugars: In a large mixing bowl, beat together the butter, granulated sugar, and brown sugar until light and fluffy.
Add eggs and vanilla: Incorporate the eggs one at a time, ensuring they are well mixed. Stir in the vanilla extract.
Prepare the dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of ground cinnamon.
wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until everything is combined.
Stuff the cookies: Take 2 tablespoons of dough and flatten it in the palm of your hand. Place a square of milk chocolate in the center and fold the dough around it, making sure to seal the edges.
Roll in cinnamon sugar: Roll each stuffed dough ball in a mixture of 1/4 cup granulated sugar and 1 teaspoon of ground cinnamon.
Bake: Arrange the cookies on the prepared baking sheet, leaving about 2 inches of space between them. Bake for 10-12 minutes, or until the edges are golden and the centers remain soft.
Cool and enjoy: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
