Crockpot French Onion Meatloaf with Melted Swiss Cheese


Ingredients:
– 2 pounds ground beef
– 1 cup breadcrumbs
– 1/2 cup grated Parmesan cheese
– 1/4 cup milk
– 2 eggs
– 1 tablespoon Worcestershire sauce


– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 large onions, thinly sliced
– 2 tablespoons butter
– 1 cup beef broth
– 8 slices Swiss cheese

Directions:
1. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, eggs, Worcestershire sauce, salt, and black pepper. Mix until fully incorporated.
2. Form the mixture into a loaf shape and place it in the crockpot.


3. In a skillet, melt the butter over medium heat and add the thinly sliced onions. Cook until caramelized, about 10-15 minutes, stirring occasionally.
4. Once the onions are caramelized, add the beef broth to the skillet, scraping up any browned bits from the bottom of the pan. Pour the mixture over the meatloaf in the crockpot.


5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the meatloaf is fully cooked.
6. About 15 minutes before serving, place the Swiss cheese slices on top of the meatloaf. Cover the crockpot and let the cheese melt.
7. Serve the meatloaf with the caramelized onions and melted Swiss cheese on top.
