Crockpot Pepper Steak
Ingredients
2 pounds beef sirloin, cut into thin strips
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 large onion, sliced
3 cloves garlic, minced
1/2 cup soy sauce
1/2 cup beef broth
1/4 cup brown sugar
2 tablespoons cornstarch
2 tablespoons cold water
1 teaspoon ground ginger
1 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
Cooked white rice or noodles, for serving
Instructions
Prepare Ingredients:
Slice the beef sirloin into thin strips.
Slice the red, green, and yellow bell peppers and the onion.
Mince the garlic.
Combine Ingredients:
In the crockpot, add the beef strips, sliced bell peppers, sliced onion, and minced garlic.
Mix Sauce:
In a bowl, combine the soy sauce, beef broth, brown sugar, ground ginger, black pepper, and red pepper flakes (if using). Pour this mixture over the beef and vegetables in the crockpot.
Cook:
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender.
Thicken Sauce:
About 30 minutes before serving, mix the cornstarch and cold water in a small bowl until smooth. Stir this mixture into the crockpot to thicken the sauce.
Serve:
Serve the pepper steak over cooked white rice or noodles.
