Sweet Strawberry Shortcake Sushi Rolls

Ingredients:

1 pound fresh strawberries, hulled and sliced
1 cup cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup graham cracker crumbs
1 cup whipped cream
2 large sheets of nori (seaweed)
2 cups sushi rice, cooked and cooled
1/4 cup sugar
1/4 cup rice vinegar

Instructions:

In a medium bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth and well combined.
In a small bowl, combine the sugar and rice vinegar, then fold this mixture into the cooked and cooled sushi rice until evenly mixed.
Lay a sheet of nori on a bamboo sushi mat covered with plastic wrap. Spread an even layer of the prepared sushi rice over the nori, leaving a 1-inch border at the top.

Spread a thin layer of the cream cheese mixture over the rice, followed by a layer of sliced strawberries.
Carefully roll the sushi mat away from you, pressing gently to form a tight roll. Seal the roll by moistening the 1-inch border with water and pressing firmly.

Repeat the process with the second sheet of nori.
Once both rolls are assembled, roll them in graham cracker crumbs to coat evenly.
Slice each roll into 1-inch pieces and arrange them on a serving plate.

Garnish with whipped cream and additional strawberry slices before serving.
