Cowboy Meatloaf and Potato Casserole 
Ingredients:
For the Meatloaf Layer:
1 1/2 lbs ground beef
1/2 cup breadcrumbs
1/2 cup diced onion
1/4 cup ketchup
2 tbsp Worcestershire sauce
1 large egg, beaten
1 tsp garlic powder
1 tsp paprika
Salt and pepper, to taste
For the Potato Layer:
4 large russet potatoes, peeled and cubed
1/2 cup milk
1/4 cup unsalted butter
1/2 cup sour cream
Salt and pepper, to taste
For the Topping:
1 cup shredded cheddar cheese
1/2 cup cooked bacon bits (optional)
1/4 cup green onions, sliced (for garnish)
1/4 cup crispy fried onions (optional)
Instructions:
For the Meatloaf Layer:
Preheat the Oven:

Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Prepare the Meatloaf:
In a large bowl, combine the ground beef, breadcrumbs, diced onion, ketchup, Worcestershire sauce, beaten egg, garlic powder, paprika, salt, and pepper. Mix until just combined.
Form the Meatloaf Layer:
Press the meatloaf mixture into the bottom of the prepared baking dish, spreading it evenly to cover the base.
For the Potato Layer:
Cook the Potatoes:
Place the cubed potatoes in a large pot of salted water and bring to a boil. Cook for 10-15 minutes, or until the potatoes are fork-tender. Drain well.
Mash the Potatoes:
In a large bowl, mash the cooked potatoes with milk, butter, and sour cream until smooth and creamy. Season with salt and pepper to taste.
Spread the Potato Layer:
Spread the mashed potatoes evenly over the meatloaf layer in the baking dish.
For the Topping:
Add the Toppings:
Sprinkle the shredded cheddar cheese and bacon bits (if using) evenly over the top of the mashed potatoes.
Bake the Casserole:
Bake the casserole in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly. If desired, broil for an additional 2-3 minutes to get the top extra crispy.
Garnish:
Remove the casserole from the oven and garnish with sliced green onions and crispy fried onions (optional).
Serve:
Let the Cowboy Meatloaf and Potato Casserole rest for 5 minutes before slicing and serving. This dish pairs perfectly with a simple salad or steamed veggies for a complete meal!
