Jerk Steak & Shrimp over Yellow Rice
Ingredients:
For the Jerk Steak:
1 lb (450g) flank steak or sirloin steak
2 tablespoons jerk seasoning
1 tablespoon olive oil
Salt and pepper to taste
For the Jerk Shrimp:
1/2 lb (225g) large shrimp, peeled and deveined
1 tablespoon jerk seasoning
1 tablespoon olive oil
Salt and pepper to taste
For the Yellow Rice:
1 cup long-grain white rice
2 cups chicken broth
1/2 teaspoon turmeric
1/4 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt to taste
1 tablespoon butter
Fresh cilantro, chopped, for garnish (optional)
Directions:
Prepare the Steak:
Season the steak on both sides with jerk seasoning, salt, and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steak and cook for 4-5 minutes per side, or until it reaches your desired level of doneness. Remove the steak from the skillet and let it rest for a few minutes before slicing thinly against the grain.
Cook the Shrimp:
In the same skillet, add another tablespoon of olive oil. Season the shrimp with jerk seasoning, salt, and pepper. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until they turn pink and are cooked through. Remove from the skillet and set aside.
Make the Yellow Rice:
In a medium saucepan, combine the rice, chicken broth, turmeric, cumin, garlic powder, onion powder, and salt. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
Stir in the butter and fluff the rice with a fork.
Assemble the Dish:
To serve, spoon a generous portion of yellow rice onto each plate. Top with sliced jerk steak and shrimp.
Garnish and Serve:
Garnish with fresh cilantro if desired. Serve hot and enjoy the spicy, flavorful combination of jerk steak and shrimp over yellow rice.
