Lamb Chops over Lobster Mash with Asparagus 
Ingredients:
For the Lamb Chops:
8 lamb chops
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
Salt and pepper to taste
2 tablespoons unsalted butter
For the Lobster Mash:

1 lb (450g) Yukon Gold potatoes, peeled and cubed
1/2 cup heavy cream
4 tablespoons unsalted butter
1/2 lb (225g) cooked lobster meat, chopped
Salt and pepper to taste
1 tablespoon fresh chives, chopped (for garnish)
For the Asparagus:

1 lb (450g) asparagus, trimmed
1 tablespoon olive oil
Salt and pepper to taste
1 tablespoon lemon juice
Method:
 Prepare the Lamb Chops:
In a small bowl, mix together the olive oil, minced garlic, rosemary, thyme, salt, and pepper. Rub the mixture all over the lamb chops. Let them marinate at room temperature for 30 minutes.
 Cook the Lamb Chops:
Heat a large skillet over medium-high heat. Add the lamb chops and cook for 3-4 minutes on each side for medium-rare, or adjust the time according to your desired doneness. In the last minute of cooking, add the butter to the skillet and baste the lamb chops with the melted butter. Remove the lamb chops from the skillet and let them rest.

 Make the Lobster Mash:
Place the cubed potatoes in a large pot and cover with water. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are fork-tender. Drain and return the potatoes to the pot. Add the heavy cream and butter, mashing until smooth and creamy. Gently fold in the chopped lobster meat and season with salt and pepper. Keep warm.
 Roast the Asparagus:
Preheat your oven to 400°F (200°C). Place the asparagus on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 10-12 minutes until tender but still crisp. Drizzle with lemon juice before serving.
 Assemble the Dish:
On each plate, spoon a generous portion of the lobster mash in the center. Place two lamb chops on top of the mash, and arrange the roasted asparagus on the side. Garnish with freshly chopped chives.
