Zucchini and Cheese Pancakes

Zucchini and Cheese Pancakes:
Ingredients:
2 zucchinis
3 chicken eggs
Bunch of spring onions
Bunch of dill
100g cheese
4 tbsp flour
1 tsp baking powder
Salt and black pepper to taste
Instructions:
Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel or paper towels.
In a mixing bowl, beat the eggs and then add the grated zucchini, chopped spring onions, chopped dill, grated cheese, flour, baking powder, salt, and black pepper. Mix well until combined.
Heat some oil in a skillet over medium heat.
Spoon the zucchini mixture into the skillet, forming pancakes. Cook until golden brown on both sides, about 3-4 minutes per side.
Once cooked, transfer the pancakes to a plate lined with paper towels to drain any excess oil.
Cucumber and Garlic Sauce:
Ingredients:


1 cucumber
4-5 tbsp sour cream
2 cloves of garlic, minced
Salt to taste
Instructions:
Peel and grate the cucumber. Squeeze out excess moisture using a clean kitchen towel or paper towels.
In a bowl, mix together the grated cucumber, sour cream, minced garlic, and salt.
Taste and adjust seasoning if necessary.
Serve the zucchini and cheese pancakes hot with the cucumber and garlic sauce on the side. Enjoy your meal!
