Ribeye Steak with French Onions and French Fries 
Ingredients:
For the Ribeye Steak:
2 ribeye steaks (about 1 inch thick)
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon fresh thyme, chopped
1 teaspoon fresh rosemary, chopped
Salt and pepper to taste
2 tablespoons unsalted butter
For the French Onions:

2 large onions, thinly sliced
2 tablespoons unsalted butter
1 tablespoon olive oil
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup beef broth
1/2 teaspoon fresh thyme, chopped
For the French Fries:
4 large russet potatoes, peeled and cut into thin fries
2 tablespoons olive oil
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Ketchup or aioli (for serving)
Method:

 Prepare the French Fries:
Preheat your oven to 425°F (220°C). Place the cut potatoes in a large bowl and toss with olive oil, salt, and pepper. Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden and crispy. Remove from the oven and keep warm.


 Caramelize the Onions:
In a large skillet, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for 10-15 minutes until softened and beginning to caramelize. Sprinkle in the sugar, salt, and black pepper, and continue cooking for another 10 minutes until the onions are deeply caramelized. Add the beef broth and thyme, stirring to combine, and cook for another 2-3 minutes until the liquid reduces slightly. Remove from heat and keep warm.
 Cook the Ribeye Steaks:
Season the ribeye steaks generously with salt, pepper, and the minced garlic. In a large skillet or cast-iron pan, heat the olive oil over medium-high heat. Add the steaks to the skillet and sear for 4-5 minutes on each side for medium-rare, or adjust the time according to your desired doneness. In the last minute of cooking, add the butter to the skillet and baste the steaks with the melted butter. Remove the steaks from the skillet and let them rest for 5 minutes.
 Serve:
Place the ribeye steaks on plates and top with a generous portion of caramelized French onions. Serve alongside the crispy French fries, garnished with freshly chopped parsley. Add ketchup or aioli on the side for dipping.
