Reverse Sear T-Bone Steak
Ingredients:
2 T-bone steaks (about 1.5 inches thick)
Salt and pepper to taste
2 tablespoons olive oil
2 tablespoons unsalted butter
2 cloves garlic, crushed
2 sprigs fresh thyme
2 sprigs fresh rosemary
Directions:
Preheat your oven to 250°F (120°C). Place a wire rack on a baking sheet and set aside.
Pat the T-bone steaks dry with paper towels. Season both sides generously with salt and pepper.
Place the steaks on the wire rack and bake in the preheated oven for 30-45 minutes, or until the internal temperature reaches about 125°F (52°C) for medium-rare or your desired level of doneness. Use a meat thermometer to check the temperature.
Once the steaks are cooked to your preference, remove them from the oven. Heat a cast-iron skillet over high heat until it is smoking hot.
Add the olive oil to the skillet, followed by the steaks. Sear each side for 1-2 minutes until a golden-brown crust forms. During the last 30 seconds of searing, add the butter, garlic, thyme, and rosemary to the skillet. Baste the steaks with the melted butter and herbs.
Remove the steaks from the skillet and let them rest for 5 minutes before slicing.
Serve the reverse sear T-bone steaks with your favorite sides and enjoy!
