Tender Lamb Shanks with Hearty Herbed Gravy
Ingredients:
4 lamb shanks
2 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced
2 carrots, sliced
2 celery stalks, chopped
2 cups beef broth
1 cup red wine
1 tbsp tomato paste
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
2 bay leaves
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Heat the olive oil in a large skillet over medium-high heat. Season the lamb shanks with salt and pepper, then sear them on all sides until browned. Transfer to a slow cooker.
In the same skillet, add the onion, garlic, carrots, and celery. Sauté for 5 minutes until the vegetables are softened.
Stir in the tomato paste and cook for 1 minute. Pour in the red wine, scraping up any browned bits from the bottom of the skillet, and let it simmer for 3-4 minutes.
Add the beef broth, rosemary, thyme, and bay leaves to the skillet, then pour the mixture over the lamb shanks in the slow cooker.
Cover and cook on low for 6-8 hours, until the lamb is tender and falls off the bone.
Remove the bay leaves, season the gravy with additional salt and pepper if needed, and serve the lamb shanks with the rich herbed gravy. Garnish with fresh parsley.
