Glazed Salmon and Shrimp Salad with Balsamic Dressing
Ingredients:
Salmon fillets, 2 (6 oz each)
Shrimp, peeled and deveined, 12 large
Mixed greens, 4 cups (such as arugula, spinach, and purple lettuce)
Cherry tomatoes, halved, 1 cup
Boiled eggs, halved, 4
Red onion, thinly sliced, 1/2 cup
Sesame seeds, 1 tablespoon
Olive oil, 2 tablespoons
Salt and pepper, to taste
Fresh herbs (like parsley or chives), chopped, for garnish
For the Glaze:
Balsamic vinegar, 1/4 cup
Honey, 2 tablespoons
Soy sauce, 1 tablespoon
Garlic, minced, 1 clove
Ginger, minced, 1 teaspoon
Instructions:
Prepare the Glaze:
In a small bowl, whisk together balsamic vinegar, honey, soy sauce, garlic, and ginger. Set aside.
Cook the Salmon and Shrimp:
Heat olive oil in a pan over medium heat.
Season the salmon and shrimp with salt and pepper.
Sear the salmon for about 4 minutes on each side, brushing with the glaze until nicely caramelized.
Add the shrimp to the pan during the last 4 minutes of cooking the salmon, flipping once and glazing them as well.
Assemble the Salad:
On a large platter, arrange the mixed greens.
Scatter cherry tomatoes, sliced red onion, and boiled eggs over the greens.
Place the cooked salmon and shrimp on top.
Serve:
Drizzle some of the remaining glaze over the salad.
Garnish with sesame seeds and fresh herbs.
Offer extra dressing on the side if desired.
