 Ingredients:
• For the Beef Filling:
o 1 lb ground beef
o 1/2 cup diced onion
o 2 cloves garlic, minced
o 1 packet (1 oz) taco seasoning mix
o 1/2 cup water
• For the Nacho Cheese Sauce:
o 2 tbsp unsalted butter
o 2 tbsp all-purpose flour
o 1 cup whole milk
o 1 cup shredded cheddar cheese
o 1/4 cup shredded pepper jack cheese
o 1/4 tsp salt
o 1/4 tsp smoked paprika
• For Assembly:
o 6 large flour tortillas
o 1 cup shredded lettuce
o 1 cup diced tomatoes
o 1/4 cup sliced black olives (optional)
o 1/4 cup pickled jalapeño slices (optional)
o 1/4 cup sour cream (for serving)

 Directions:
1. Prepare the Beef Filling:
o In a large skillet over medium-high heat, add the ground beef and cook until browned, about 5-7 minutes.
o Add the diced onion and minced garlic, and cook for another 2-3 minutes until the onion is softened.
o Drain any excess grease. Stir in the taco seasoning mix and 1/2 cup of water. Simmer for 5 minutes, stirring occasionally, until the beef is fully coated in the seasoning and the mixture has thickened. Remove from heat and set aside.
2. Make the Nacho Cheese Sauce:
o In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, until the mixture is lightly bubbling but not browned.
o Slowly pour in the milk, whisking constantly to remove any lumps. Cook for 2-3 minutes until the mixture thickens slightly.
o Remove from heat and stir in the shredded cheddar cheese, pepper jack cheese, salt, and smoked paprika until smooth and creamy. Set aside.
3. Warm the Tortillas:
o Warm the flour tortillas in a dry skillet over medium heat for 30 seconds per side, or until soft and pliable. Alternatively, you can microwave them for 15-20 seconds.
4. Assemble the Wraps:
o Place each tortilla on a flat surface. Spoon a generous amount of the seasoned beef filling into the center of each tortilla.
o Drizzle with the warm nacho cheese sauce, then top with shredded lettuce, diced tomatoes, sliced black olives, and pickled jalapeño slices (if using).
o Fold the sides of the tortilla over the filling and roll it up tightly to create a wrap.
5. Serve and Enjoy:
o Serve the Nacho Cheese Beef Wraps immediately, with a side of sour cream for dipping. Enjoy the combination of gooey cheese, savory beef, and fresh toppings in every bite!
