Crispy Potato Hash with Bacon and Fried Egg
Ingredients:
2 large potatoes, peeled and grated
4 strips of bacon, cooked and crumbled
2 large eggs
2 tablespoons olive oil (for frying)
2 tablespoons butter
Salt and pepper, to taste
1 tablespoon chopped chives (for garnish)
Instructions:
Prepare the Potatoes:
Grate the peeled potatoes and place them in a clean kitchen towel. Squeeze out as much moisture as possible to ensure crispy hash.
Season the grated potatoes with salt and pepper to taste.
Cook the Bacon:
In a skillet, cook the bacon strips until crispy. Set aside on a paper towel to drain, then crumble or chop the bacon.
Make the Hash:
In the same skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat.
Add the grated potatoes to the skillet and press them down with a spatula to form a flat layer.
Cook for 4-5 minutes on each side until golden brown and crispy. Remove from the skillet and set aside.
Fry the Eggs:
In a separate pan, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat.
Crack the eggs into the pan and cook sunny-side up until the whites are set, but the yolks remain runny (about 3-4 minutes). Season with salt and pepper.
Assemble the Dish:
Place the crispy potato hash on a plate. Top with crumbled bacon, followed by the sunny-side-up egg.
Garnish with freshly chopped chives for a burst of color and flavor.
