Banana French Toast Roll-Ups
Ingredients:
8 slices of bread 
2 ripe bananas, sliced 
2 large eggs 
1/4 cup milk 
1/2 teaspoon vanilla extract 
1/2 teaspoon ground cinnamon (optional) 
1 tablespoon unsalted butter 
Maple syrup, for serving 
Instructions:
 Prepare the bread: Cut the crusts off the bread slices. Use a rolling pin to flatten each slice of bread until it’s thin. 

 Add the banana: Place a few banana slices along one edge of each flattened bread slice. Gently roll up the bread around the bananas, pressing the seam to seal. 
 Make the egg mixture: In a shallow dish, whisk together the eggs, milk, vanilla extract, and ground cinnamon (if using). 
 Dip the rolls: Heat the butter in a large skillet over medium heat. Dip each banana roll-up into the egg mixture, making sure it’s fully coated. 
 Cook the roll-ups: Place the roll-ups in the skillet and cook, turning frequently, until all sides are golden brown and crisp, about 2-3 minutes per side. 
 Serve: Serve the Banana French Toast Roll-Ups warm, drizzled with maple syrup and topped with extra banana slices if desired.
